Using less salt of course reduces the sodium content in your chips and will be better for you.
The vitamin K in kale isn’t diminished when you make kale chips, and this is the vitamin which keeps your bones and heart healthy. However, with roasted kale chips, you will lose some of their vitamin C content.
If you have hypothyroidism, baked kale is actually better for you than raw kale because roasting the kale deactivates the compound which affects the thyroid function. Also, raw kale can be difficult for your body to digest, adding another tick for kale chips.
